Rainbow Rice Paper Rolls

These rice paper rolls are simple to make and can feature just about any ingredients you like. Great for school or work, they’re the perfect snack for when you need a quick and energising lunch. And the peanut dipping sauce is seriously quick and easy to whip up. Here’s how you can make these delicious rolls at home.

We’ve featured a range of seasonal vegies (and one fruit!) to fit all colours of the rainbow, but you can use anything that comes to mind. If you’re not a coriander fan, feel free to sub it out for more mint or try some Thai basil. Similarly, some fried shallots would be a great and crunchy addition if you have them on hand, or raw beetroot for that vibrant colour and shot of fibre to your diet. For the carnivores, some shredded chicken would a delicious addition. What you pop into your rice paper rolls is entirely up to you. Here’s how we made ours.

Ingredients

Rice paper rolls
• 1 pack rice paper wrappers
• Warm water
• 1 bunch mint
• 1 bunch coriander
• 1 Lebanese cucumber
• 1 carrot
• 1 avocado
• ½ head red cabbage
• Papaya or mango (depending on preference)
• Sesame seeds, toasted

Dipping sauce
• 1 tbsp smooth peanut butter
• 2 tbsp soy sauce
• ½ tsp chilli sauce (like Sriracha)
• 1 clove garlic, crushed
• 2-4 tbsp hot water

Method
1. Slice all your vegetables and papaya into thin strips about 5-6cm long

2. Pour warm water into a shallow dish so that it just covers the entire dish

3. Cover your board with a damp tea towel or clean disposable cloth – having a slightly damp work surface is essential as it will stop your wrappers from sticking

4. Take a rice paper wrapper and dip it in the warm water, holding each side in the water for 5-10 seconds. The wrapper will start to soften to that familiar consistency – don’t dunk it for too long or it will fall apart

5. Layer your ingredients towards the bottom third of your wrapper

6. Fold each side of the rice paper roll towards the middle (like you would a burrito) and then firmly roll the length of the wrapper, tucking your ingredients in firmly.

For sauce
1. Place all ingredients in bowl and mix until combined into a smooth sauce. Add more water if you’re not quite achieving your desired
consistency

2. Garnish with sesame seeds
